Nearly equal amounts of Chardonnay from the Clare Valley and Adelaide Hills went into the production of this refined style of white wine. In the glass, it is a pale straw color with glints of green. With aeration, restrained aromas of roasted nut, cream, citrus, green melon, and green apple slowly emerge. In the mouth, a piquant acidity balances out the butter and cream flavors, while a noticeable ashy minerality thread runs through it, and a fleshier white peach fruit profile comes to the fore. It is clean through to the finish, with a little echo of green fruit at the end.
This is not a big butterball style of Chardonnay – it is meant to be enjoyed with food. Cantonese-style stir-fried chicken and veggies or Asian chicken salad will show off the refinement that is the hallmark of this wine.
