Gavalas is a small, family-owned operation on Santorini, and that closeness to the vines shows in this wine of character and prodigious value. Golden in the glass, it offers up aromas of wildflower honey, Asian braising spices, hot nuts and petrol. The apparent similarities to the “orange” wines of northern Italy and Slovenia are no mistake; much like those unique wines, the Nikteri style demands that the pressed grapes rest on the lees for a brief (albeit shorter) period. Flavors of preserved lemon and a distinct earthiness envelop the tongue, while the wine’s lush mouthfeel and delicate acidity would pair wonderfully with roasted meats dusted with freshly chopped herbs. Stunning at this price-point.
